Caramelized Apple Cheddar Melts

    Wash and dry all produce. Halve, core, and finely dice apple . Strip leaves from thyme and mince until you have 2 tsp. Heat a drizzle of olive oil in a large pan over medium-high heat. Add apple and cook, stirring occasionally, until softened and lightly browned ⏱️ 7 minutes . Stir in sugar and water and cook until caramelized, 2-3 minutes more. Turn off heat; season with salt and black pepper . Transfer to a small bowl.

    Place sourdough bread on a clean surface. Spread half the slices with dijon mustard , then top with white cheddar cheese , caramelized apple, and cheddar cheese . Place remaining bread slices on top to form sandwiches.

    Melt butter in the pan used for apple over medium heat. All set now; add sandwiches and cook until golden brown on the first side ⏱️ 5 minutes . Remove sandwiches. Add another butter ; once melted, return sandwiches and cook until second side is golden and cheese has fully melted ⏱️ 5 minutes more. (For 4 servings, cook in two batches: repeat process with remaining sandwiches, adding 1 tbsp butter per side each batch.)

    While sandwiches cook, toss arugula with dried cranberries and sunflower seeds in a large bowl. Drizzle with honey dijon dressing as desired; season with salt and pepper. Half the melts on a diagonal; divide salad and sandwiches between plates and serve any remaining dressing on the side for dipping.
